It's about time I finally got you another meal-in-a-jar. This is a recipe I got from my cousin while we were visiting her for a family reunion. Between the two of us, we have six kids and all six of them ate this and asked for more! That's a huge hit in my book, so I definitely needed the recipe. I made 6 jars so that I have lots for my pantry because I know my kids are going to want to eat this over and over. The one adjustment I made was not adding green chilies, and that's only because I didn't have any, not because I don't want them. Once I have some in stock, I will definitely add them to the jars. 
As always, this recipe uses ingredients that are on sale from Thrive Life Foods this month. The instant rice is one of the items on sale, but I didn't have any on hand, so I just grabbed some from my local grocery store, use whichever is convenient for you. 
I also don't have packages of taco seasoning, which is what the recipe calls for, I use it often enough that I buy it in bulk! So I used 3 Tbsp from my bulk container. Feel free to use whichever garlic and salt you prefer, I use Epicure garlic, it's by far my favourite. 
 Cooking this meal as a one pot meal infuses the flavour right into the rice, making it so tasty and delicious. Here is the recipe:






Chicken Taco Bake
3/4 cup Freeze Dried Chicken Slices
3/4 cup Freeze Dried Red Peppers
1/4 cup Freeze Dried Green Chili Peppers
1 1/2 cup Instant White Rice
1/4 cup Freeze Dried Chopped Onions
1 package Taco seasoning
1 tsp dehydrated minced garlic
1/4 cup freeze dried Tomato Powder
1 1/2 tsp Salt

Layer ingredients in a jar and store for 6-12 months until ready to eat. 

When ready to eat, add contents of jar to 5 1/2 of water. Cook, covered on low for 20 min, then uncover and let stand for 10 min. 

Serve either on a soft tortilla, on a salad or as is. Top with your favourite taco toppings. My favourite is to have it on a tortilla with refried beans and sour cream, so yummy!! Everyone in our group ate it differently and was thrilled with the variation. 


I know I don't look thrilled, but that's because I was exhausted! I actually love this meal and probably had four over the course of two days!

  1. Could I substitute instant beans for the meat? I have lots of canned meats but very little that is freeze-dried.
