What is Freeze Dried Food

Hey there! Today I want to talk about something I've become passionate about:
Freeze Dried Food

I know it sounds crazy and sounds like it's "moon food", but let me tell you, my family LOVES it! We use freeze dried food every day for snacks, meals and baking. But with freeze drying becoming one of the latest buzz words in the food industry, the question I get asked the most, is what IS freeze dried food?
Freeze Drying is a process where food is flash frozen and then the moisture is removed through sublimation (sounds all sciencey doesn't it? Bet you never thought those junior high science classes would be handy!) For those of use that don't remember junior high science, sublimation is the process where (in our case water) is moved directly from a solid to a gas without passing through the liquid phase.  Kinda cool.
OK, so what?? Why does that matter?? 
Think of your ice cube tray, have you ever left in in the freezer and just forgot about it? What happens? The water disappears but the there is something left behind, a dry residue. That dry residue is the minerals from your water. Where all of this becomes meaningful is in the processing of your food. When your strawberries are picked ripe off the vine, they taste delicious: full of flavour and nutrients that make them awesome and make them strawberries. When they are picked green and shipped to a supermarket where they sit on the shelf waiting to ripen, they are flavourless and bland. So, how does freezedrying help? So when your freshly ripened and delicious strawberry is freeze dried, the water sublimates leaving behind the flavour and the nutrition, making this the best strawberry you've had since that summer you were at your Grandma's house and ate the strawberries fresh of the vine (YUM! My FAVOURITE way to eat strawberries!)

1/2 cup Freeze dried Strawberries
1/2 cup Freeze dried Bananas
1/4 cup freeze dried spinach
1/4 cup freeze dried vanilla yogurt bites





 Blend freeze dried ingredients into a powder (should only take a few seconds). 
add:
1 cup milk
1/2 cup water



blend until smooth; enjoy!
