It's a new month, with new specials at Thrive, that means it's time for a new meal-in-a-jar recipe. This recipe is great because it's really versatile. You can add whatever veggies you like to the mix. I used the veggies I had on hand, there is a great selection of veggies on sale this month, and chopped chicken is on sale as well! I used Zucchini, peas, beans, peppers, onions and mushrooms, but you could use corn, carrots, asparagus, broccoli or cauliflower instead (or in addition). Just note, that what I used barely fit into the jar, so if you're adding more or using veggies that are bigger - like broccoli - you'll likely need to put it in a ziploc bag for storage rather than a jar. You'll also need to add a bit more water if you're adding more veggies.
I made this recipe for my kids and they devoured it and asked for it again the next day! Great way to get veggies into my picky eater!




Here's the recipe as I made it. Note that the sour cream can either be added as a powder into the jar, or you can just add fresh sour cream when you go to cook it. Either works great, just depends on if you have sour cream powder on hand or not!

Ingredients:
1 c chopped chicken
1 c Zucchini
1/3 cup mixed bell peppers
1/2 c onion slices
1 c green beans
1/2 c green peas
1 c mushrooms
1/4 cup green chilies
1 Tbsp curry powder

1/2 Tbsp limeade
1/2 c sour cream powder 
(or add fresh when cooking)

1 Tbsp dehydrated garlic


Directions:
Layer in jar or bag. Store in a dark dry location (cupboard works great) for 3-6 months. When your ready to eat, add to 3.5 cups water, bring to a gentle boil and boil for 5-10 minutes, depending on the veggies you choose. Serve hot. I like to serve it either over rice or with naan bread.

I actually had my ten-year-old son make this jar meal because I was trying to do too many things at once! He likes to change things up a bit, so there are different veggies in each of the jars, just for a bit of variety. I had him put the powders on top because we were short on space. It doesn't look quite as pretty to do it this way, but it gives more space if you tap down the jars to get the powder to sift through. 

He was pretty proud of himself and he did a great job! Can't wait to have it again! I love having these meals on hand!
