Green peas are on sale this month, and I'm seriously excited about it! I know it sounds a bit odd to be excited about something so boring, but let me tell you, Thrive green peas are the best ever! Last year I grew a garden for the first time in years, I grew it at my parents house because they actually have space and I don't. That way I also wasn't in charge of the watering, which is good because with me it's either drought or flood!
I was super excited to grow veggies, and everything actually did really well! So here's the thing, as I was shelling my peas, I couldn't help but notice that it was a LOT of work to grow peas, and guess what, the Thrive peas taste just as amazing! Guess who's not growing peas anymore because she doesn't like the time it takes to shell them??? (It's me in case you can't guess!)
Seriously, the Thrive peas are just as good as home grown peas, they are amazing!
What I love about peas is how versatile they are. Throw them in a casserole, pasta, stir fry, or just on their own fresh or cooked, so delicious! Have you ever tried them freeze dried straight from the can?? So delicious! My niece and nephews go nuts for them! They are the perfect toddler snack, and the other day my boyfriend even asked me to hand over the can for his tv snack. Everytime my kids and I use them, we can't help but eat a couple handfulls straight from the can!
Here is a recipe for Green Pea Salad that I came across a few years ago. I have adjusted it slightly to work with freeze dried ingredients and fit my taste. This recipe was made with Bacon TVP, which is a discontinued thrive product, but you could also use Ham dices, which are also on sale this month, are you could use fresh bacon or ham, just adds a bit more work (or try the cooked bacon you can get for ceasar salads, that would be delish!)
Green Pea Salad:
3 cups Freeze Dried Green Peas
2 cups Freeze Dried Sweet Corn
3/4 cup Freeze Dried Ham Chunks (or bacon)
1/3 cup Freeze Dried Chopped onion
1 Cup Cheddar cheese - cut into cubes
Dressing:
1/3 Cup Sour Cream
1 Tablespoon Ranch Dressing
Salt and pepper to taste
Directions:
Add freeze dried ingredients into bowl and add water to just cover, let sit for about 5 minutes until all ingredients are refreshed.
Prepare dressing by mixing ingredients to together until well blended.
When pea mixture is refreshed, pour off any excess water, add cheese and dressing; mix well.
Let sit in fridge for 2-4 hours to allow flavours to blend.
Serve chilled.
Another sale item in this recipe is the Thrive Sweet Corn. Again, this is so delicious as is, but perfect for cooking, adding to soup, casserole, etc. The possibilities are endless!
