I adore soups during the winter! There is nothing better than enjoying a delicious warm soup when it's chilly outside. So I am always on the lookout for new soups. There seem to be lots of soups that are loaded with veggies, but those soups are also often loaded with carbs, so I've been working on soups that are low in carbs or free of carbs. The great side effect of that, is that it makes them great for those eating a keto diet. The recipe I came up with today, was SO SO good! And lucky for you, I wrote it down!
So, what do you need for my Creamy Veggie & Sausage Soup? A bunch of veggies, obviously! So, the annoying thing about making veggie soup is all of the chopping. Want an easier way? Combined with the fact that they cook quickly due to the nature of freeze drying, these are the perfect veggies for soup, that's why I use them so often!
3/4 cup veloute (brown gravy mix)
1 cup broccoli
1 cup cauliflower
1/4 cup carrots
1/4 cup green chilies
3/4 cup mushroom slices
1 cup sausage crumbles
1/2 cup milk
1 Tbsp Butter
salt and pepper to taste
Mix veloute into water ensuring there are no lumps. Add veggies and sausage crumbles, bring to a low boil. Cook until veggies are soft, carrots will take the longest as they are dehydrated, not freeze dried, should take about 7 min. Add milk and butter, simmer for about a minute. Add salt and pepper as desired. Serve.
My boys and I loved this soup so much that we ate the entire thing! This recipe makes 5-6 servings, but we loved it so much that we devoured the entire thing! My boys were eating so happily that I had a hard time getting a picture of them. But here's what I got!
